An Heirloom Tomato, Raw

We’ve been watching our heirloom tomatoes bulk up all summer and they finally made their final blush from green to red last week. The variety ‘mortgage lifter’ lived up to its name and the largest weighed just under 2 lbs. When I sliced through it, I couldn’t believe how much it looked like red meat (maybe this is where the term “beefsteak” comes from?).

They’re delicious raw, but you can add some salt, garlic, olive oil, and basil if you want. Plus bread for sopping up any remaining liquids.

Serves 4
Prep time: 2 minutes

Ingredients:

  • 1 just-picked heirloom tomato

  • Optional additions: drizzle of olive oil, pinch of salt, torn basil leaves, minced garlic, splash of red wine vinegar, hunks of bread

Slice tomatoes and arrange on a plate. Add extra ingredients if using.
