Chamomile Tea (Hot or Iced)

Seemingly overnight, our chamomile plants have put forth hundreds of tiny white and yellow blossoms. This is our first year growing them, and I’m smitten with their green apple flavor.

With such summer abundance, I’m motivated to preserve as much as I can, drying and tucking the blossoms away in the pantry, a gift to rediscover in the depths of winter. 

For now, however, I’m craving iced herbal tea as we endure this latest heat wave.

Prep time: 15 minutes (longer if you’re making iced tea)
Makes 32 oz

Ingredients:

  • Around 2 tablespoons dried or fresh chamomile blossoms

  • 32 oz water

Bring water to nearly a boil (190*-200* F). Fill a tea strainer with chamomile blossoms. Pour the water into a large jar and add the tea strainer, swirling every so often. Start to taste the tea after 5 minutes, steeping longer for a stronger flavor. Enjoy hot or let it cool on the counter and then refrigerate if you’re making iced tea.
