Mixed Herb Cheese Ball

This is the time of year when it’s important to pinch off herb tips. This keeps them from flowering and encourages more leaves and a bushier form.

I hate to waste the herb tips, however, and wanted to put them to good use. Coincidentally, we just picked up our goat cheese CSA from Lost Peacock Creamery, which prompted me to make an herb cheese ball. So easy! 

Note: Mark said that it’s a bit strong, especially since we’re using very fresh herbs. Try reducing the amount of herbs, if needed. 

Prep time: 5 minutes
Serves 4

Ingredients:

  • 4 oz goat cheese

  • 1/2 cup (loosely packed) mix of herb tips, minced

  • Pepper to taste

Spread the minced herbs on a cutting board or large plate. Grind or sprinkle some pepper over the herbs. 

Using clean and cool hands (a quick rinse under cold tap water will do), form the goat cheese into a ball. Roll it around in the minced mixed herbs and place on a small plate. Serve with crackers, bread, pita, etc.
