Blistered Snow Peas

Truthfully, these snow peas don’t need a recipe. They’re so delicious raw when freshly picked. BUT, if you did want to cook them, here’s my favorite preparation technique. 

Prep time: 10 minutes
Serves 1-2

Ingredients

  • 1 tbsp neutral oil

  • 1 cup snow peas, rinsed and trimmed

  • 1 tsp sesame seeds

  • 1/2 tsp soy sauce

  • 1/2 tsp rice vinegar

Heat the oil in a large frying pan over medium heat, just until it starts to shimmer. Add the snow peas and stir constantly. They’ll be ready once they puff up and deflate and once the skin starts to blister, about 2 minutes. Turn off heat, add the sesame seeds, and let the seeds toast in the residual heat for another minute longer, stirring to keep them from burning. Add the soy sauce and rice vinegar and stir to combine.

Serve as a snack, side dish, or over white rice.
