Chickweed Green Drinks

Drink your chickweed? Absolutely. It tastes like wheatgrass, which, for me, is a little too strong to enjoy on its own. Fortunately, when blended with sweet fruit, it shifts to freshness and brightness rather than grassy-ness.

Chickweed is nutrient-dense, cold hardy, and grows like, well, a weed. We're including some to try in this week's winter greens CSA, but you can easily forage it on your own (just make sure you know your plant identification!).

I've got a beautiful patch of chickweed at one of our farm sites and have been playing around with it in the kitchen. Here are two recipes I've been enjoying:

With a juicer:

  • 1 Fuji apple

  • 1 small handful of chickweed

  • 1 kiwi*

  • 1 thumb-sized knob of ginger

With a blender:

  • 1 banana

  • 1 cup frozen berries

  • 1 cup of milk or milk alternative

  • 1 small handful of chickweed

  • 1 scoop protein powder (optional)

*Typically a wheatgrass + apple juice shot includes lemon for acidity. I swapped it out for kiwi, and since that can grow here in the PNW, this a potentially 100% local food recipe!
